印度許多節慶都會吃 Pakora慶祝,基本就是將一些蔬菜外包裹著 Besan( 或可以用 chickpeas flour取代)下去炸,口感很類似日本料理的炸甜不辣、或是台式的鹽酥系列,但今天介紹用鐵板煎也可以煎出脆脆的感覺!

1. 食材

Medium firm Tofu

1 tbsp chickpeas flour

1 tsp Turmeric powder 薑黃粉

1 tsp Salt

少許水

2. 步驟

  1. chickpeas flour、薑黃粉、鹽加上水伴成糊狀,並將豆腐塊均勻的包裹在糊狀裡
  2. Pizza鐵板上加入椰子油,冷微熱時下豆腐
  3. 豆腐表面變脆時翻面(很神奇用 chickpeas flour不怎麼會黏鍋)
  4. 另一面也變脆後即可完成(尊重印式口味焦焦脆脆的版本,可以煎久一點)
